
Celebrating Asian/Pacific American Heritage Month
May is Asian/Pacific American Heritage Month, a chance to pay tribute to the generations of Asian and Pacific Islanders who have enriched America’s history and are instrumental in its future success.

• Dynasty Maifun Rice Sticks, 1 6.75-oz. pack |
• 2 lemons |
• Shredded cabbage, 1 pack |
• Garlic salt, to taste |
• Shredded carrots, 1 pack |
• Black pepper, to taste |
Directions |
1. Soak the rice noodles in water for at least 15 minutes before preparations. |
2. Cut the noodle bundle in half before boiling. |
3. Boil the rice noodles in two cups water and a 1⁄2 cup of soy sauce until they are soft. |
4. Drain the soy sauce water and place the cooked rice noodles into a container or serving dish. |
5. Fry the shredded cabbage and shredded carrots until they are soft. |
6. Mix the rice noodles, shredded cabbage, and shredded carrots. |
7. Add the juice of two lemons to the pancit bihon. |
8. Add garlic salt and pepper to taste. |
We’re proud to celebrate the many employees at Kleinfelder with Asian and Pacific Islander heritage, like Senior Administrative Specialist Miki Muramoto and Staff Archaeologist Jacy Miller.
Miki, from our San Diego office, celebrates her Japanese background and her experience growing up in Hawaii: “Anywhere in Hawaii, the sentiment is always the same, and that is to work hard and have aloha for each other. I feel this strong upbringing has allowed me to be successful in everything I do.”

When commenting on what she’d want others to know about her heritage, Miki advised, “Always live ALOHA! Everyone is ohana (family), which is why we call elders ‘Aunty’ or ‘Uncle,’ even though we’re not related. We take pride in our family, and, growing up, we always had people over with lots of food, which always showcased an array of my family’s background.”
Jacy joined Kleinfelder as part of the recent acquisition of Garcia & Associates (GANDA) and sits in our Kailua, Hawaii office.
Noting that recent events have provided a glimpse into the lives of Asian Americans and their struggles, Jacy remarked, “As a Pacific Island archaeologist of Filipino heritage, I believe that celebrating and embracing Asian and Pacific Islander heritage is important now more than ever.
